It is a popover, but large, and hopefully not incinerated [grin]. The small ones we are acquainted with are a later innovation. I am going to try to make one that does not fall. It has to be baked very hot, as it is steam that causes it to rise. If they come out crusty enough they may not fall, but it probably helps to vent them with a knife immediately upon removing them from the oven. (People generally say that lets the steam out, but I am sure what it actually does is to let air in, to replace the steam as it condenses.) Often served with roast meat and gravy in the UK, in which case savory flavorings are in order. There are also sweet versions for dessert or breakfast, similar to a Dutch Baby. Add sausages to make Toad in the Hole. I have made some progress with popovers, but they are difficult at best with our electric oven--I never had the least trouble with a gas oven.
