  2. Finally used the cocoa butter to make chocolate for chips last night. This is the first raw cocoa butter I've ever tried, and it smells and tastes a whole lot like canvas. Was very tempted to just trash it and go on with the coconut oil. Glad I didn't. With the cocoa, vanilla and splenda, it makes a pretty good chocolate. So more choc chip cookies in my life today.

    As someone who's lived most of my adult life as a low carber, I pretty much gave up stuff like cookies and candy long ago. Three or maybe four times a year, I'd indulge. But this last six months with even bread, beans and potatoes gone, not to mention rice, it's been much much harder. So the discovery of almond meal and what one can do with it has been a real, and prolly life saving, joy.

    THE basic recipe is:

    two cups almond flour
    two eggs
    1 tsp baking powder
    salt?
    1/4 cup coconut oil
    enough water

    AT that, you have waffles. Add sugar, spices and/or cocoa, and you have all different kinds of cookies, brownies, cake.

  3. puddle, I'd like to try that with dates soaked in orange juice, then mashed, to be the sweetener. Maybe with a touch of cinnamon. Ginger?

    1. That sounds lovely, listener. I'd guess about a cup of sweet for 2 cups of almond meal.

      Dates and OJ are both way too carby for me, but if you're in better shape than me (and you are) see no reason not to, lol! A tsp or two of spice. Four TBS of cocoa (I use 2 HEAPING TBS

      If you use raw Cocoa instead of Dutched Cocoa, you use baking powder. If you use Dutched cocoa, you use baking soda.

  4. First we had Grandson for a day. Then we took a day to recoup. Then we had VT*Grand overnight. Now we're recouping again. LOL! Sweet fun, though I'm super tired!

  5. Loverly flowers. We had snow today.

    Went to the mall. It's been so long, I can't even remember the last time I went there. Big and busy and overwhelming. And the Apple Store! You would not believe how crowded and busy that store was! Got a new cord for my iPhone, but they weren't able to solve my iPad problem. Didn't want a new model, so will look again on eBay for a model 2. This time I'll be more careful and read everything three times. *sigh* Went home with Patty and Peter for a while. Peter tried, but the iPad wouldn't do what the instructions said it should. *shrug* Glad to get home. Patty and Peter's is always a nice place to be, but the mall pooped me out. Nice to get home and put on my slippers.
