There were no statistics in the article, so Ilooed them up. Since 1965 total per capita meat consumption has increased about 20%, driven entirely by increased consumption of chicken anr, to a lesser extent, turkey. Consumption of red meat has fallen about 25%.

DeleteCouldn't find good data for earlier dates. but consumption of chicken started to surge in the 1950s as prices plummeted.
